I do have time to cook, but cook for 5 picky eaters who would not be interested in healthier choices. I live in Mexico City, so a lot of American spices are hard to find.

I usually cook soups, such as fideo. First you fry the fideo in oil and then you add the tomato juice and onion, garlic and salt.

Other things I cook are all cooked in oil. A lot of chicken, but breaded or roasted. I like to eat for the taste. I just want simple fast healthy choices.

I am on a budget, a mother of two. I am 5’6, 140 pounds. I love working out, but I am having money troubles and can longer afford the gym.

So I went 3 weeks no working out. For the last three mornings I have exercised but can not seem to control my cravings for sweets and carbs.

I also love coffee and green tea. A typical day starts at 7, ends at 11;00. On new years my resolution was to lose weight. I started at 157 and lost 17 pounds, I have stuck for a month now and ready to lose 10 pounds in 6 weeks! Here is a basic sample of what I eat:

Breakfast: 1 boiled egg with coffee, no sugar, no cream

Snack: Peach

Lunch: sandwich, whole wheat bread with mayo, turkey, lettuce, tomato and chipotle

Snack: Crackers(8) with cream cheese

Dinner: Homemade pozole, hominy corn w/chicken, lettuce, lime, radish, salsa, avocado, baked tostada w/cream, cheese, salsa, avocado

Dessert: assorted home made candy

I feel like a stuffed pig. Everyday at 3 is a big challenge, I feel like I am starving. I also have a night bug, where I just want to eat everything at night.

Ok, I will give you some healthy recipes that I cook for myself. But want to tell you that you eat too much for your goal to lose weight. Please forget about cracker; eat only from time food made of corn (it has carbs); no candies; cream usually is full of fats, don’t know how is yours; bread – eat only a slice per day; mayo is no no – make your own sause with 3-4 spoons of yogurt and seasonings (garlic, bazil etc).

Here is explanation how to cook green beans you can eat from this as much as you want.

Tuna sandwich – this contain bread, so don’t eat it more than 1-2 times per week.

Shopska salad this is a traditional salad in my country (Bulgaria), but it is so easy to prepare and you can eat from it with no limitations because it is so healthy and almost zero calories.

Tzatziki salad again easy to prepare, delicious and healthy.
